Peanut Butter Crunch Cookies - My Own Recipe

Ingredients:
  • 1/2 cup Butter
  • 1/2 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 tablespoon Vanilla Extract
  • 1 teaspoon Almond Extract
  • 2 cups Flour
  • 3/4 cup Rice Krispy Cereal (crush if you want less of a crunch)
  • 1/4 cup Smooth Peanut Butter
  • 3/4 Crunchy Peanut Butter
  • 1 Large Egg
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
Directions:
  1. Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheet(s) or use parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar on high speed until smooth.
  3. Lower speed and beat in the large egg, vanilla, and both peanut butter.
  4. Combine the flour, baking soda, and salt in separate bowl. Add to the butter mixture on low speed until well blended.
  5. Fold in rice cereal.
  6. Shape tablespoonfuls of dough into balls. Place cookies 2 inches apart on the prepared cookie sheets. Press fork (or thumb) into cookie to flatten slightly.
  7. Bake for 10 to12 minutes in the preheated oven. Allow to cool completely.
  8. Enjoy!
