Peanut Butter Crunch Cookies - My Own Recipe
Ingredients:
- 1/2 cup Butter
- 1/2 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1 tablespoon Vanilla Extract
- 1 teaspoon Almond Extract
- 2 cups Flour
- 3/4 cup Rice Krispy Cereal (crush if you want less of a crunch)
- 1/4 cup Smooth Peanut Butter
- 3/4 Crunchy Peanut Butter
- 1 Large Egg
- 1/2 teaspoon Salt
- 1 teaspoon Baking Soda
- Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheet(s) or use parchment paper.
- In a large bowl, cream together the butter, brown sugar, and white sugar on high speed until smooth.
- Lower speed and beat in the large egg, vanilla, and both peanut butter.
- Combine the flour, baking soda, and salt in separate bowl. Add to the butter mixture on low speed until well blended.
- Fold in rice cereal.
- Shape tablespoonfuls of dough into balls. Place cookies 2 inches apart on the prepared cookie sheets. Press fork (or thumb) into cookie to flatten slightly.
- Bake for 10 to12 minutes in the preheated oven. Allow to cool completely.
